A vibrant and healthy Buddha Bowl featuring crispy tofu, fresh vegetables, and quinoa, all prepared effortlessly in the air fryer.
Ingredients
Protein
14ozextra firm tofu(pressed and cubed)
2Tbspsesame oil
1/4cupsoy sauce
3Tbspmolasses
2Tbsplime juice
1TbspSriracha
Vegetables
1lbfresh broccoli (florets only)
3mediumcarrots (peeled and thinly sliced)
1redred bell pepper (thinly sliced)
8ozfresh spinach (sautéed with olive oil and garlic)
Grains
2cupscooked quinoa (or brown rice)
Instructions
Press and cube tofu, then marinate in soy sauce, sesame oil, molasses, lime juice, and Sriracha for 5-10 minutes.
Preheat air fryer, then cook tofu at 370°F (185°C) for 15 minutes, shaking halfway.
While tofu cooks, toss broccoli, carrots, and bell pepper in marinade and cook in air fryer at 370°F (185°C) for 10 minutes, shaking occasionally.
Cook spinach on stovetop until wilted. Assemble bowl with quinoa, vegetables, spinach, and tofu. Drizzle with remaining marinade and garnish with sesame seeds.
Notes
For extra flavor, sprinkle with sesame seeds or chopped green onions before serving.
