Instructions
Press and cube the tofu, then marinate in sesame oil, tamari, maple syrup, sriracha, and lemon juice for 5 minutes.
Cook quinoa in water until fluffy, about 15 minutes.
Preheat air fryer to 400°F. Air fry tofu for 15 minutes, shaking halfway.
Chop vegetables; toss with sesame oil and salt, then air fry at 400°F for 5-7 minutes.
Assemble bowls with quinoa, tofu, vegetables, spinach, and sesame seeds. Drizzle with remaining marinade.
Notes
For extra flavor, serve with additional sriracha or lemon wedges.
