A vibrant and nutritious plant-based meal featuring grains, fresh vegetables, tofu, and a flavorful peanut sauce.

Ingredients

Grains

  • 1.25 cups whole-grain rice

Vegetables

  • 1 red onion red onion
  • 1 lemon lemon (juice)
  • 1 cup cucumber (diced)
  • 1 cup red cabbage (thinly sliced)
  • 1 large carrot (sliced with a vegetable peeler)
  • 1 large mango (diced)
  • 2 cups spinach
  • 1 avocado avocado

Protein

  • 16 ounces tofu (firm or extra firm)

Sauces & Oils

  • 1 tablespoon olive oil
  • 3 tablespoons peanut butter
  • 3 tablespoons tahini
  • 4 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon ginger (grated)
  • 1 clove garlic (grated)
  • 2 teaspoons sriracha (or red pepper flakes)
  • 2 tablespoons sesame oil (optional)

Garnishes

  • 1 teaspoon sesame seeds
  • 1 handful cilantro
  • 4 wedges lime

Instructions 

  • Cook rice in boiling salted water, then drain and cool.
  • Slice and marinate red onion in lemon juice and salt for 10 minutes.
  • Pat dry tofu, slice, toss with oil, salt, pepper, and grill for 3 minutes per side.
  • Whisk together peanut sauce ingredients until smooth.
  • Assemble bowl with rice, spinach, diced mango, carrot ribbons, cabbage, cucumber, sliced avocado, tofu, and top with pickled onion and peanut sauce. Garnish with sesame seeds, cilantro, and lime wedges.
