Instructions
Roast sweet potatoes at 425°F for 15 minutes, then add broccoli and roast for another 12–15 minutes.
Toss chickpeas with olive oil, smoked paprika, and salt; roast for 20–25 minutes until crispy.
Cook quinoa in 2 cups water with salt for 15 minutes, then rest and fluff.
Whisk tahini, lemon juice, maple syrup, garlic, salt, and warm water to make dressing.
Assemble bowls with kale, quinoa, roasted vegetables, chickpeas, cucumber, onion, avocado, sesame, and drizzle with dressing.
Notes
For extra crunch, sprinkle additional seeds or nuts on top before serving.
