A vibrant and nutritious meal featuring quinoa, roasted vegetables, and a creamy tahini dressing, perfect for a wholesome lunch or dinner.

Ingredients

Base

  • 1 cup quinoa (or brown rice)
  • 1 tablespoon olive oil
  • 1 medium sweet potato, peeled and diced
  • 1 cup broccoli florets
  • 1/2 cup chickpeas, drained and rinsed ((or 1 can))
  • 1 avocado sliced avocado
  • 1/4 cup shredded carrots
  • 1/4 cup red cabbage, thinly sliced
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1 tablespoon maple syrup (or honey)
  • 1/2 teaspoon garlic powder
  • to taste Salt and pepper
  • 1 tablespoon sesame seeds (optional)

Fresh herbs like cilantro or parsley for garnish (optional)

Instructions 

  • Cook quinoa by rinsing 1 cup and simmering in 2 cups water for 15 minutes. Roast sweet potato and broccoli at 400°F (200°C) for 20-25 minutes.
  • Mix tahini, lemon juice, maple syrup, garlic powder, salt, and pepper to make the dressing. Thin with water if needed.
  • Assemble bowls with quinoa, roasted vegetables, chickpeas, avocado, carrots, and cabbage. Drizzle with dressing and garnish with sesame seeds and herbs.

Notes

Feel free to customize with your favorite vegetables and herbs for added flavor.
