A vibrant and healthy Mediterranean-inspired dish featuring fluffy couscous, fresh vegetables, and a creamy tahini sauce.

Ingredients

Broth and Spices

  • 2 cups low-sodium vegetable broth
  • 0.5 teaspoon cumin seeds

Couscous

  • 2 cups whole wheat couscous or Israeli couscous

Seasonings

  • to taste sea salt Sea salt
  • to taste black pepper Freshly ground black pepper

Vegetables and Legumes

  • 9-10 cups romaine lettuce, cut into 1-inch pieces
  • 1 15-oz. can chickpeas, rinsed and drained
  • 1 medium cucumber, finely chopped ((1½ cups))
  • 1 medium tomato, finely chopped ((1 cup))
  • 1 red onion red onion, thinly sliced ((1 cup))

Herbs and Condiments

  • 2 tablespoons fresh parsley, finely snipped
  • 1 tablespoon lemon juice
  • 1.5 cups Tahini Dipping Sauce (see link)

Instructions 

  • Bring broth and cumin to boiling, stir in couscous, cover, and let stand 15 minutes.
  • Fluff couscous, then divide lettuce, chickpeas, cucumber, tomatoes, onion, and couscous into bowls.
  • Sprinkle with parsley, add lemon juice, and drizzle with Tahini Dipping Sauce.

Notes

Adjust salt and pepper to taste. For extra flavor, add a squeeze of lemon or a drizzle of olive oil.
