Instructions
Add all curry paste ingredients to a food processor and blend until smooth.
Saute the curry paste in oil for 2 minutes until fragrant, adding water if needed.
Add chopped tomatoes and tomato paste; cook for 2 minutes.
Add chicken and cook for 2 minutes, then add water and bring to a boil.
Season with salt and pepper, cover, and simmer for 8-10 minutes until cooked.
Stir in sour cream and lemon juice; simmer for 2 minutes, then garnish with cilantro.
Notes
Adjust seasoning to taste and serve hot with rice or bread.
