A vibrant and healthy bowl combining crispy baked falafel, fresh vegetables, herbs, and grains for a satisfying meal.

Ingredients

Dry ingredients

  • 1 cup chickpeas (uncooked, soaked overnight in water)
  • ½ red onion red onion
  • 3 cloves garlic
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 cup chopped cilantro
  • 1 cup chopped parsley
  • Salt to taste Salt
  • 2 tablespoons olive oil

Cooked grains and vegetables

  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes (halved)
  • ¼ cup red onion (chopped)
  • 2 persian cucumbers diced persian cucumbers
  • ½ cup chopped parsley
  • ¼ cup chopped mint
  • 2 tablespoons extra virgin olive oil
  • Salt and black pepper (to taste) Salt and black pepper
  • 1 clove garlic (minced)
  • 2 tablespoons lemon juice

Roasted vegetables

  • 1 pound rainbow carrots (cut into chunks)
  • 1 tablespoon olive oil
  • Salt (to taste) Salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika

Additional toppings

  • Hummus of your choice Hummus
  • Tzatziki Tzatziki
  • Greens (baby arugula, kale, spring mix, etc) Greens

Instructions 

  • Preheat oven to 375°F (190°C).
  • Add all falafel ingredients to a food processor, pulse until coarsely combined. Form into patties and bake on parchment-lined tray at 375°F for 25-30 minutes, flipping halfway.
  • Mix cooked quinoa, tomatoes, onions, cucumbers, parsley, and mint. Prepare dressing with olive oil, lemon juice, garlic, salt, and pepper, then toss with the quinoa mixture.
  • Toss carrots with olive oil, salt, black pepper, and paprika. Roast at 375°F for 20 minutes until browned and tender.
  • Assemble the bowl: layer greens, quinoa tabbouleh, falafel, hummus, roasted carrots, pomegranate seeds, herbs, and toppings. Serve immediately.

Notes

You can prepare the falafel mixture ahead of time and refrigerate for up to 24 hours before baking.
