A vibrant and healthy Mediterranean-inspired bowl featuring homemade falafel, fresh vegetables, and creamy hummus.
Ingredients
Base

cooked quinoa
(for 2 servings)
Protein & Vegetables

cup
canned chickpeas, drained

tbsp
chickpea flour
2
cloves
garlic, minced

handful
fresh parsley, chopped

ground cumin

tbsp
tahini + juice of 1 lemon

hummus
Vegetables

cherry tomatoes and cucumber, diced

baby spinach or mixed greens
Instructions
Mash chickpeas with chickpea flour, garlic, parsley, cumin, and salt into a coarse dough.
Shape into 8-10 patties and chill for 10 minutes.
Bake at 200°C for 18-20 minutes until golden.
Whisk tahini, lemon juice, salt, and water into a dressing.
Divide quinoa into bowls, top with greens, vegetables, falafel, and hummus. Drizzle with dressing.
Notes
You can prepare the falafel ahead and reheat for convenience.
