Instructions
Cook quinoa in chicken broth according to package instructions.
Roast sweet potatoes and onion at 425°F for 20 minutes, flipping halfway.
Sauté garlic and ginger in oil, then cook chicken until done, about 5-6 minutes.
Whisk together dressing ingredients until smooth and refrigerate.
Assemble bowls with quinoa, roasted vegetables, chicken, spinach, avocado, cucumber, cilantro, and drizzle with dressing.
