Instructions
Preheat oven to 400°F (200°C) and grease a baking dish with butter.
Thinly slice the potatoes and layer them in the dish, seasoning with thyme leaves, salt, and pepper as you go.
Dot the layers with butter and sprinkle grated cheese over each layer.
Cover with foil and bake for 45 minutes, then remove foil and bake for an additional 10 minutes until golden and crispy.
Let rest for a few minutes before serving.
Notes
Use a mandoline for even slices and ensure the potatoes are thin for best results.
