  • 4-5 large Baking Potatoes
  • 4 tablespoons Butter (plus extra for greasing)
  • 5 springs Fresh Thyme (whole springs)
  • 1 tablespoon Thyme Leaves (only leaves)
  • to taste Salt and Pepper Salt and Freshly Ground Black Pepper
  • 0.75 cup Parmesan Reggiano or Pecorino Romano (grated)

Instructions 

  • Preheat oven to 400°F (200°C) and grease a baking dish with butter.
  • Thinly slice the potatoes and layer them in the dish, seasoning with thyme leaves, salt, and pepper as you go.
  • Dot the layers with butter and sprinkle grated cheese over each layer.
  • Cover with foil and bake for 45 minutes, then remove foil and bake for an additional 10 minutes until golden and crispy.
  • Let rest for a few minutes before serving.

Notes

Use a mandoline for even slices and ensure the potatoes are thin for best results.
