A quick and flavorful chicken curry made with simple ingredients, perfect for a weeknight dinner.

diced fire-roasted tomatoes

(non-fat, 2% or 5% fat are all OK)

Instructions
Heat olive oil in a large skillet over medium heat.
Sauté onion for 4-5 minutes, then add garlic and cook 30 seconds.
Stir in curry powder, tomatoes, broth, salt, pepper, and cayenne. Simmer 2-3 minutes.
Add chicken and cook 1-2 minutes until warmed. Off heat, stir in yogurt.
Serve hot, garnished with parsley or cilantro and chopped peanuts.
Notes
Use leftover cooked chicken for convenience and adjust spice level to taste.
