Ingredients

Protein

  • 4 ounces wild salmon fillets

Vegetables

  • 1 pound asparagus
  • 2 bunches fresh watercress
  • 1 ripe avocado (sliced)
  • 1 cucumber cucumber (thinly sliced)
  • 1 bunch beets (thinly sliced)

Dressing

  • 1/4 cup fresh squeezed lemon juice
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon fresh grated ginger
  • 1 tablespoon Dijon mustard
  • 1 clove garlic (minced)

Seasoning

  • 1 teaspoon salt
  • 0.5 teaspoon pepper

Instructions 

  • Preheat oven to 400°F (200°C). Place salmon on parchment, season with salt and pepper, and bake for 8-9 minutes.
  • Trim asparagus ends, cut into 1.5-inch pieces, and slice avocado, cucumber, and beets thinly.
  • Mix lemon juice, olive oil, ginger, Dijon mustard, and garlic in a jar; season with salt and pepper, then shake well.
  • Arrange watercress, asparagus, cucumber, beets, and avocado in bowls. Add baked salmon and drizzle with dressing.
