A vibrant and nutritious Indian-inspired Buddha Bowl featuring flavorful moong dal, aromatic rice, roasted cauliflower, and fresh vegetables, all topped with cooling cucumber raita.

Ingredients

Moong Dal

  • 1 cup moong dal (split mung beans) (rinsed and soaked for 15-20 minutes)
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 1-2 dried chili pepper dried chili pepper (adjust to spice preference)
  • 1 teaspoon ginger paste
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 0.5 teaspoon red chili powder (adjust to spice preference)
  • 0.5 teaspoon salt (adjust as needed)
  • 0.5 teaspoon garam masala
  • 2 tablespoons cilantro (chopped)
  • 1 cup basmati rice (rinsed)
  • 1.5 cups water
  • 1 teaspoon cumin seeds
  • 1 teaspoon salt (adjust as needed)
  • 1 head cauliflower (cut into florets)
  • 1 tablespoon olive oil
  • 0.5 teaspoon ground cumin
  • 0.25 teaspoon smoked paprika (optional)
  • Salt and pepper to taste
  • 1 cup plain yogurt
  • 0.5 medium cucumber (grated)
  • 1 tablespoon mint leaves (finely chopped)
  • 2 cups chopped vegetables (tomato, cucumbers, bell peppers, onions)
  • A squeeze fresh lemon juice (optional)
  • Salt and pepper to taste

Instructions 

  • Rinse and soak moong dal, then cook until tender.
  • Cook basmati rice with cumin and salt until fluffy.
  • Toss cauliflower with oil, cumin, paprika, salt, and pepper; roast at 400°F for 12-15 minutes.
  • Mix yogurt with grated cucumber, mint, and salt to make raita.
  • Chop vegetables, season with salt, pepper, and lemon juice, then assemble bowls with rice, dal, cauliflower, vegetables, and top with raita.
